  • First, prep your springform pan by tracing a circle around it onto parchment paper. Cut on the inside of the circle, about a centimeter from the line. Trim as necessary to fit inside the pan. You can use a straight glass or jar to help you do this, but I made my husband help me and he just preferred to use his knuckles.

This crazy colours vegan ice cream cake was a big success at my daughters birthday party recently.

Which was a relief, because her birthday is smack dab in the middle of winter!

Thankfully no-one complained about eating cold birthday cake and some even came back for seconds.

My daughter originally requested a rainbow theme for her party, but straight lines have never really been my thing.

I just dont have the patience for precision, especially when theres ice-cream in the process of melting.

Having looked at a bunch of super-impressive rainbow ice-cream cakes online, I figured the best I could hope for was more of a crazy quilt design.

At least if I set out to do it randomly, no matter how it turned out, I could legitimately claim it was deliberate.

So I managed to mutate the theme into crazy colours, which included heaps of brightly coloured balloons, confetti and paper chains, and this magnificent creation.

I used my springform tin, lined with sandwich wrap, and crossed my fingers and hoped it wouldnt leak.

It didnt.

All while my beautifully churned ice-cream slowly melted.

You may be surprised, but it generally isnt that hard to find a vegan boxed cake mix. Thats because these mixes often require you to add ingredients such as eggs and milk on your own. That means that you can simply use a vegan egg replacer and plant-based milk!

One brand you can look for is Annies, which has a vegan funfetti cake mix that works perfectly for this recipe.

If you are using canned coconut cream, the amount of liquid in the bottom of the can is small enough that it isnt necessary to chill and separate.

How To Make No Churn Dairy Free Ice Cream:

The secret to creamy no-churn dairy free ice cream is to use coconut cream. Most recipes for no churn coconut ice cream say to chill the coconut cream, scrape off the solid part, and then whip it.

The problem that can happen with the chill and whip process, is that if your fridge is very cold is can get the coconut cream too hard, and it wont whip. Youll still have chunks of hardened coconut cream.

To avoid this from happening, I took a different approach using room temperature coconut cream. This process also uses gelatin. The gelatin helps it too not separate, it stabilizes the coconut cream, and helps you to whip a little air into your ice cream so it isnt too hard.

You’ll also need some sweetened condensed coconut milk. You can try making your own, but it uses another can of coconut milk, and takes a long time to boil it down with sugar and cool it down, so I always buy mine. The high sugar content in the coconut sweetened condensed milk helps to keep your no churn dairy free ice cream from forming too many ice crystals.

Even with the gelatin, this dairy free ice cream freezes a bit hard. Youll need to let it sit on your counter for 5-10 minutes to soften before you scoop it.
