The magic formula for Milk Bar’s cake truffles

Christina Tosi made cake truffles cool by making birthday cake truffles, using scraps from her Milk Bar birthday cake. It’s also a smart, money-saving business move to take the leftover scraps that would have been thrown out and to turn them into something else that you can sell. Birthday cake truffles are like bite-sized morsels of birthday cake, easy to make and super fun to eat.

Making The Cake Crumb

This portion of the recipe is probably the easiest and my favorite! The Cake Crumb is what really sets this dessert apart, in my opinion. It adds texture to each bite and is extremely delicious. While this portion of the recipe is actually used at the end of the assembly, I encourage you to make it first so that it has time to fully cool before coating the crumb cakes.

The cake crumb is actually a smaller version of the cake recipe, minus a few ingredients. When finished, it almost tastes like a sugar cookie. The main difference between the cake crumb for this version of the recipe and the original, is that you will want less large chunks in the cake crumb. This will allow a more sand-like consistency in the cake crumb and it will adhere to the white chocolate much better during assembly.

Making the Cake

This is the part of the recipe where I have made some modifications from the original recipe to accommodate converting it to truffle crumb cakes. The first step was to reduce the size of the cake being made to half of what the original recipe calls for. Instead of making the cake a quarter sheet pan, we have reduced the cake to fit into an eighth sheet pan.

Dont have an eighth sheet pan? You could always double the cake to fit in your quarter sheet pan and use half. Or you could try using another cake pan with similar volume to an eighth sheet pan.

Milk Bar Birthday Truffle Crumb Cakes stand out from the rest of the refrigerated products that surround them because they look like already baked cookies tucked in between the pudding cups and cookie dough packages. Milk Bar Birthday Truffle Crumb Cakes which come in Birthday Truffle Crumb and Chocolate Cakes are ready-to-eat treats from Christina Tosis Milk Bar line, inspired by her well-known confetti cakes.

    The truffle cakes come in packages of two and are just a bit bigger than your average candy bar. There are two cakes in each package. The cakes seem to actually be more like cake pops than regular cake, very dense and with an almost cookie dough-like texture to them. Most cake pops are shaped into balls, put on sticks and served fresh. These are flattened into discs, dipped in a white confectioners coating and rolled in streusel and sprinkles, then packaged.

    The truffle crumb cakes look cute and brightly colored, but theyre just not as satisfying to eat as a real birthday cake or even a cake pop. Theyre extremely sweet, and their dense texture means that they are both chewy and a bit dry. The streusel on top adds a bit of crunch for texture, but adds even more sweetness.

    The whole Cake Pops craze pretty much passed me by with no interest on my part, but I think its accurate to say that Cake Truffles are Cake Pops without sticks. Or Cake Pops are Cake Truffles with sticks. I have no idea which ones the chicken and which ones the egg.

    After making the Momofuku Milk Bar Chocolate Chip Layer Cake, I had a whole container of cake scraps left. The obvious use, of course, would be to simply go at em with a fork. But we were sort of busy with eating the actual cake. The Cake Truffles recipe from the same Momofuku Milk Bar cookbook by Christina Tosi makes great use of these weirdly shaped bits and pieces.

    Before You Start

    One great thing about this recipe is that youre simply making use of leftovers, so there really are no new ingredients needed. You can also use any kind of cake, combined with whatever frosting/cake-moistening ooze, chocolate and coating you like, making it the ultimate cabinet crap recipe. In addition to the scrap Chocolate Chip Layer Cake, the Cake Truffles I made used up leftover passion fruit purée and chocolate Crumb.

    Milk Bar birthday cake truffles originated as a way to use leftover scraps of cake in the Milk Bar bakery which I LOVE. People have no idea how much waste happens in a commercial kitchen, even when kitchens try to be really good about it. And people have ZERO clue how much waste can happen in a bakery, especially ones churning out tons of cakes.

    The original birthday truffles Milk Bar recipe takes cake scraps, mixes it with vanilla milk, makes a sticky dough and tosses each truffle in white chocolate and then a sugary flour sand. The Milk Bar truffles are delicious, but man that is a lot of work for some crushed up cake.

    I wanted my version to have all the same aspects soft chewy dough, sandy coating, sweet interior but with half of the effort.

    So now that we know all about the OG lets get into my Milk Bar birthday cake truffles recipe.

    How To Make Chocolate Truffles

  • Beat the cream cheese in a medium mixing bowl until it achieves a whipped consistency.
  • Blend in the confectioners sugar until light and fluffy.
  • In a double boiler or microwave-safe bowl melt the chocolate chips. Allow to cool slightly before adding to the crema cheese mixture. *see notes
  • Slowly fold in the melted chocolate along with the vanilla until combined. This is also the time to add any other extracts or the chopped nuts if desired.
  • Chill in the refrigerator for at least 1 hour.
  • Once the mixture has chilled and has a stiff consistency, it is ready to move on to rolling.
  • Use a small cookie scoop to portion out 3/4 -1 sized scoops and then roll between your hands to round it out.
  • Roll in desired coating nuts, coconut or cocoa powder.
  • Refrigerate until ready to serve.
  • Return any leftovers to the refrigerator for up to 2 weeks.

The first episode features Milk Bar founder, Christina Tosi, and explores her reimagining of desserts. With menu items like crack pie, corn cookies, and birthday cake truffles, this bakery is a step away from traditional American favourites.

    Ive been a fan of milk bar for years. And while I had tried all the items mentioned above, Id always been curious about their peculiar birthday cake. Now you must understand: I am the biggest fan of cake. I mean I am Lily Muffins after all.

    So one fateful day, with my curiosity swirling inside of me, I took the plunge and shelled out a weeks worth of lunch money on this infamous dessert, or in my case, dinner.

    For my fellow Torontonians, Milk Bar has a location downtown within the Shangri La hotel near University and Queen. Though its hidden on the second floor within the momofuku restaurant, its stocked full of popular goodies.

    I headed upstairs, picked up a cake and made my way home at the end of a long work week.

    In a very enthusiastic state of mind, I was looking forward to having cake for dinner on a Friday night. So here is my full review, coming from a cake-a-holic. Below Ive given my full honest opinion using a rating system I have devised for the sole purpose of this post.
